White Board Wednesday: Hummus Crusted Chicken!

It's White Board Wednesday and Emma gave us her favorite recipe!
Hummus - Crusted Chicken
Prep: 10 min Cook: 25 min
- 4 boneless, skinless chicken breasts
- 1 yellow squash/zucchini/onion (chopped)
- 1 cup of hummus
- 1 T olive oil
- 2 lemons
- 1 tsp smoked paprika
- Preheat oven to 450
- Season chicken with salt/pepper. In a large (separate) bowl toss zucchini/squash/onion with olive oil until evenly coated. Season with salt/pepper.
- Place all veggies at the bottom of the baking dish, layer chicken on top. Evenly coat chicken with hummus. Squeeze fresh lemon juice over the entire dish. Sprinkle paprika
*Bake for 25-30 minutes, until chicken is cooked through and veggies are tender. Enjoy!
