White Board Wednesday: Hummus Crusted Chicken!

It's White Board Wednesday and Emma gave us her favorite recipe!

Hummus - Crusted Chicken

Prep: 10 min    Cook:  25 min


  • 4 boneless, skinless chicken breasts
  • salt/pepper
  • 1 yellow squash/zucchini/onion (chopped)
  • 1 cup of hummus
  • 1 T olive oil
  • 2 lemons
  • 1 tsp smoked paprika


  • Preheat oven to 450
  • Season chicken with salt/pepper.  In a large (separate) bowl toss zucchini/squash/onion with olive oil until evenly coated.  Season with salt/pepper.
  • Place all veggies at the bottom of the baking dish, layer chicken on top.  Evenly coat chicken with hummus.  Squeeze fresh lemon juice over the entire dish.  Sprinkle paprika


*Bake for 25-30 minutes, until chicken is cooked through and veggies are tender.  Enjoy!
